Ingredients
- 12 ounce can pineapple juice concentrate 1 tablespoon Agar Agar powder (heaping)
- 11/2 cups water
- 1/4 cup fresh lemon juice
- 2 tablespoons orange juice concentrate 1/4 teaspoon grated lemon peel
- 1 baked Whole Grain Pie Crust
Directions
- Bring pineapple juice concentrate to a boil.
- Add Agar Agar powder and stir until dissolved.
- Stir in remaining filling ingredients.
- Place in refrigerator to set up.
- When firm, process in a blender until smooth.
- Pour into baked pie crust and chill until firm.
- Garnish with lemon twist and mint, if desired.
- Top with Whipped Cream (p. 72), if desired.
- For variation, blend in 1/2 cup tofu.
