Ingredients

  • 12 ounce can pineapple juice concentrate 1 tablespoon Agar Agar powder (heaping)
  • 11/2 cups water
  • 1/4 cup fresh lemon juice
  • 2 tablespoons orange juice concentrate 1/4 teaspoon grated lemon peel
  • 1 baked Whole Grain Pie Crust

Directions

  1. Bring pineapple juice concentrate to a boil.
  2. Add Agar Agar powder and stir until dissolved.
  3. Stir in remaining filling ingredients.
  4. Place in refrigerator to set up.
  5. When firm, process in a blender until smooth.
  6. Pour into baked pie crust and chill until firm.
  7. Garnish with lemon twist and mint, if desired.
  8. Top with Whipped Cream (p. 72), if desired.
  9. For variation, blend in 1/2 cup tofu.

Serves 8.
