  • 3 1/2 cups water
  • 2/3 cup clean, raw cashews
  • 1 1/2 cups hot, cooked millet*
  • 1/2 cup honey, OR 3/4 cup pitted dates
  • 2 teaspoons vanilla 1/4 teaspoon salt


Process cashews with about 1 cup of the water in a blender until very smooth. Add millet and remaining water and continue blending. Add remaining ingredients and blend until very smooth. Pour into an ice cream freezer and follow directions for dairy ice cream. Serves 11. (From Something Better.)

*Simmer about 6 tablespoons millet grain in 1 1/2 cups salted water for 45-60 minutes.

VARIATIONS: (1) For Carob “Ice Cream,” add 2 tablespoons carob powder; (2) For Maple Walnut “Ice Cream,” add 1 teaspoon maple flavoring and 1/2 cup finely chopped walnuts; (3) For Fruity “Ice Cream,” add 1-2 cups strawberries, peaches, or other fruit.
